

In 2019, I began learning to sharpen on whetstones from Isassi sensei. Sensei is from Seki, Japan and not only taught me skills and techniques, but also imparted respect for the knives themselves.
The same year I traveled to Japan and bought my first Japanese Gyuto. Since then, I’ve continued refining my technique and recently incorporated belt sharpening to improve consistency and reproducibility.
Griffin Blade Sharpeners is named after my second son, who keeps me sharp with questions like, “Do bees get COVID?”
